Oh my. Do I love me some dip. In fact, not many people know this, but I'm the official co-founder of the Dip Club at my workplace. Every month, we schedule a lunch entirely of dip, and everyone brings one to share. It's been an raging success. Turns out a lot of people like dip.
I have a library of dip recipes, and this one is a new addition. Don't you just love the name? Green goddess dip. It's insanely easy and a delicious use of fresh summertime herbs. It also turns out a gorgeous green color that will look very pretty on your table. Debbie, who is a self-proclaimed non-domestic goddess, whipped this up for the shower with very little supervision. Yay, Debbie! She's very proud of herself.
So, happy dipping! Let me know how it turns out for you.
What you'll need:
1 cup sour cream (low fat is for weenies)
3/4 cup mayo
Handful minced fresh parsley
Handful minced fresh chives
2 tablespoons minced fresh tarragon
1 tablespoon fresh lemon juice
1 garlic clove, minced
A few pinches of salt
A few turns of fresh ground pepper
Throw it all into a food processor, and blend, baby, blend. Spoon it into a pretty little bowl and let it chill in the fridge for an hour, so all those flavors get the chance to mingle and meld. The end. That's all you have to do.
Serve with crudites or toasted baguette. Or serve it in endive leaves like we did at the shower. Or just eat it by the spoonful. Only kidding (mostly).
